The Basics

Simply put, food changes the way wine tastes. And the dominant taste of food will change any wine the same way. When I refer to tastes, I literally mean the basic tastes of sweet, sour, salty, bitter, and the protein taste, umami. What? You haven't heard of umami? Well that's a whole other topic for another time. For now think of the taste of tofu - its dominant taste is umami. It can also be described as "savory."

Key Insight: The dominant taste of food will change what you taste in your wine.
